Cod with cranberry thyme topping

Dab the fish dry with kitchen paper. Puree the cranberries, lemon zest, honey, thyme, garlic, salt, freshly ground pepper and 75 grams of butter into a coarse paste. Spread this pasta over the tops of the cod fillets.

Heat the rest of the butter in an ovenproof frying pan. Place the fish next to each other in the pan with the cranberry paste on top.

Heat the oven grill. Fry the fish in almost 3 minutes until done and then put under the hot grill so that the cranberry spice paste melts over the fish.

Serve with mashed potatoes or baked potatoes and chicory (see tip).
