Spanish rice with cod

Thaw the cod fillet. Chop the onion into large pieces and finely chop the garlic cloves. Heat the olive oil in a large frying pan and gently fry the onion and garlic. Stir in the turmeric with 1 tablespoon of paprika powder. Stir in the rice and cook while stirring until the grains shine.

Cut the peppers and the cocktail tomatoes into cubes, and finely chop the leaf parsley. Then put in the pepper, tomato and half of the parsley. Add 500 ml of water with some salt. Boil the rice over medium heat in almost 10 minutes. Add some more water if necessary.

Meanwhile, cut the cod fillets into coarse pieces and rub them in with paprika, salt and freshly ground pepper. Place the pieces of fish between the rice and let them cook for 4-6 minutes. Sprinkle the rest of the parsley over it. Tasty with a fresh salad.
