Dab the fish dry.

Mix the flour with 1 teaspoon salt and 1/2 teaspoon pepper and swirl the fish through.

Cut larger mushrooms slightly smaller.

Heat 1/3 of the butter and smear the snow peas, spring onions, salt, pepper, 2 tablespoons of lemon juice and half of the lemon zest 5-6 minutes.

Heat the rest of the butter and fry the fish in 2 minutes light brown and cooked.

Remove the fish fillets from the pan and keep them warm under aluminum foil.

Fry the mushrooms in the shortening and add the crème fraîche. Season with salt and pepper.

Roast the pistachio nuts in a dry, hot frying pan.

Serve the fish on the snow peas with spring onions. Pour some mushroom sauce over and spread the pistachio nuts and the rest of the lemon zest over it.
