Cod with roasted winter carrots and potatoes
Single oven dish with winter carrots, potato wedges, cod and almond shavings.
Preheat the oven to 180 ° C.
Peel the winter carrot and cut into thick sloping slices of 2 cm thick.
Divide together with the potato wedges over a baking sheet covered with parchment paper.
Sprinkle with the oil and bake in the middle of the oven in 30 min.
In the meantime, dry the fish. Sprinkle with the herbs, pepper and salt and sprinkle with the rest of the oil.
Remove the baking sheet from the oven halfway through the baking time and scoop the potatoes and vegetables together.
Place the cod in the middle of the baking tray, sprinkle the almond shavings over the winter carrot and cook for about 15 minutes.
Meanwhile, clean the lemon and grate the peel.
Remove the baking sheet from the oven, spread everything over a plate, sprinkle with the lemon zest and serve with a lemon wedge.
