Directions

  1. Bring a pot of water with 2 tsp salt to the boil. Add the chicken fillet and simmer for about 12 minutes.
  2. Hold the water against the boil (poaching). Remove the chicken from the pan and allow to cool slightly.
  3. Meanwhile, grate the green skin of the lime and squeeze out half of the fruit.
  4. Mix the mayonnaise with the grater and juice and season with tabasco, pepper and salt.
  5. Cut the chicken into thin slices. Tear the basil into large pieces and mix with the rocket and coriander.
  6. Divide into 4 plates. Put the chicken on it and spread the mayonnaise over it. Sprinkle with salt and pepper to taste.
