Cold potato cream soup
A tasty French recipe. The vegetarian starter contains the following ingredients: butter, spring onions ((a 3 pieces), in rings), shallot (finely chopped), herbs broth, crumbly potatoes (peeled and diced) and crème fraîche (125 ml).

Melt the butter in a (soup) pan.

Keep 1 tbsp spring onion apart and fry the remaining with the shallot 2 min.

In the butter, without coloring.

Pour in the stock and bring to the boil.

Add the potato cubes and cook slowly over low heat for 20 min.

Remove the pan from the heat and puree the soup with the hand blender.

Add the crème fraîche, (freshly ground) black pepper and salt to taste.

Allow the soup to cool down and then let it cool down for at least 2 hours in the refrigerator.

Taste the soup and add some extra pepper and salt if necessary.

Spoon the soup into festive glasses and sprinkle with the rest of spring onions..
