Halve the white coals and cut the stalk at an angle.

Cut the pieces into thin strips.

Mix the coals and carrot in a colander with the salt and place a plate with a weight on it.

Let everything stand for 1 hour.

The coal becomes softer and loses some moisture.

Rinse the coals and root under running water and press out the moisture.
-
Dab the coals and root dry with kitchen paper.
-
In a bowl mix the mayonnaise with the vinegar, mustard and some pepper to make a dressing.

Put the carrots with carrots, spring onions and celery through them.

Delicious as a side dish with meat, chicken and fish or on a sandwich.
