Preheat the oven to 200ºC. Grate old cheese, pecorino or Parmesan cheese.

Create small piles of cheese with sufficient space on a baking tray with baking paper.

Bake the cheese in the middle of the oven for about 10 minutes. Allow to cool and remove the cheese crusts from the paper.
