Courgette carpaccio with smoked meat

A tasty Italian recipe. The starter contains the following ingredients: meat, balsamic vinegar, extra virgin olive oil, fresh Italian spice mix (finely chopped), chestnut mushrooms (sliced), pine nuts (and / or pumpkin seeds), courgettes, sea salt, rucola salad (a 75 g) and beef smoke.

Directions

  1. Beat the vinegar with the oil and Italian herbs into a dressing. Season with salt and pepper. Scoop through the mushrooms. Fry the mushrooms in a frying pan with non-stick coating for 5 min. On a high heat brown and crispy. Roast the pine nuts in a frying pan without oil or butter in 3 min. Golden brown. Let cool on a plate.
  2. Scrape the courgettes into thin slices with a cheese slicer or peeler lengthwise and spread them next to each other on four large plates. Sprinkle with the sea salt. Put in the middle a bunch of arugula with the smoked meat and scoop the mushroom slices from the dressing. Sprinkle the remaining dressing over the zucchini. Sprinkle with the pine nuts. Delicious with ciabatta (bread).
