Couscous Salad With Smoked Chicken

Directions

  1. Cut the onion into thin rings and soak the onion rings for 5 minutes in a bowl with cold water.
  2. Pour the stock over the couscous. Let it work for 5 minutes. Meanwhile cut the chicken fillet into slices that are as thin as possible.
  3. Cut the avocado half in half. Remove the kernel and scoop out the flesh with a spoon from the peel. Cut the flesh into slices.
  4. Squeeze out the lemon. Drizzle the avocado with half of the lemon juice.
  5. Make a dressing of the oil and the rest of the lemon juice and season with pepper. Clean the peppers and cut into cubes.
  6. Stir in the dressing with the peppers through the vaulted couscous. Drain the onion rings onto kitchen paper. Divide the chicken, onion and avocado over the couscous.
