Couscous chicken with coriander
A nice Mediterranean recipe. The main course contains the following ingredients: poultry, extra virgin olive oil, couscous, chicken fillets, kofta (kebab (pot)), chickpeas ((400 g), drained) and fresh coriander (finely chopped).

Bring 200 ml water with 1 tbsp olive oil to a boil in a pan. Remove the pan from the heat and stir in the couscous. Cover the pan and leave the couscous for at least 5 minutes.

Sprinkle the chicken with 1 teaspoon of kebab spices, salt and pepper. Brush the fillets with 1 tbsp oil. Heat the grill pan and grill the chicken breasts for about 5 minutes until they release from the ribs of the pan. Grill the other side in approx. 5 min. Golden brown. Turn the fillets halfway a quarter of a turn, so that a nice grill pattern is created.

Heat the remaining 2 tbsp oil in a frying pan. Stir the couscous with a fork. Stir in the couscous, chickpeas, coriander and the remaining 2 tsp kebab herbs through the oil and let everything warm on a low heat. Stir occasionally.

Cut each chicken fillet into 3 nice pieces and spread them over the plates, spoon the couscous next to it. Tasty with spinach with raisins.
