Couscous fresh falafel and harissa yogurt

Heat the oil in a frying pan and stir fry the vegetables with the zhug 8 min. On medium heat.

In the meantime, heat the oil in a frying pan and fry the falafel 6 min. On a medium heat until golden brown and done.

Meanwhile, put the couscous in a bowl, add the boiling water and let it soak for 5 minutes.

Stir with a fork and mix with the rest of the oil, pepper and salt.

Meanwhile, mix the harissa with the yogurt and season with salt and pepper. Cut the coriander coarsely. Scoop the couscous through the vegetables.

Divide the couscous and falafel over the plates. Garnish with the coriander and serve with the harissa yogurt.
