Directions

Prepare the couscous according to the instructions on the package. Allow to cool and stir with a fork.

Cook the frozen peas for 2-3 minutes. Drain them, rinse cold water and drain.

Make a dressing of lemon juice, ginger, olive oil and coriander powder. Scoop this dressing with the peas, red pepper, the radish and avocados through the couscous.

Sprinkle the salad with the chopped coriander or flat parsley.
