Couscous salad with capers and pistachio nuts

Prepare the couscous according to the instructions on the package. Spread over a flat dish and let cool for 30 minutes.

Meanwhile, peel the cucumber with a peeler and cut it in half.

Remove the seeds with a teaspoon and cut the flesh into strips of 1/2 cm wide. Cut the strips into cubes.

Drain the capers and store a half tablespoon of the caper juices per tablespoon mayonnaise. Cut the fresh mint into strips. Chop the nuts coarsely.

Mix the cucumber, capers and fresh mint through the couscous.

Mix the mayonnaise with the yogurt and the caper juices. Stir through the couscous. Season with pepper and salt.

Sprinkle with the pistachio nuts and pomegranate seeds.
