Grilled avocado with black beans
Barbecue avocado with tomatoes, lime and coriander in a salsa and black beans and smoked almonds.

Light the barbecue.

Cut the tomatoes into small cubes and put in a bowl.

Clean the lime. Grate the green skin of half the lime above it. Halve the fruit and press out ½ tbsp juice at 6 servings.

Cut the coriander roughly and mix half of it through the tomato. Season with pepper and salt.

Put the beans in a colander, rinse under cold running water and let drain. Chop the almonds coarsely.

Cut the avocados half in half, remove the seeds and place the avocado halves with the cutting edge on the barbecue grill.

Grill about 3 minutes or until you see grill marks.

Divide the avocado halves over a nice dish with the grilled side upwards. Fill with the black beans and the salsa.

Sprinkle with the almonds and the rest of the coriander.
