Put the cranberries with the sugar, ginger, clove, orange zest and juice and add 200 ml of water. Bring to the boil and simmer the berries covered in 10-15 minutes until done. Leave to simmer for a few minutes without the lid until the sauce is thicker. Beat in the ice-cold butter and switch off the heat source. Let the sauce cool down until lukewarm.

Peel the pears, halve them and carefully scoop out the cores.

Put the halves together in a bowl and sprinkle with a few drops of lemon juice. Pour over a spoonful of cranberry sauce and serve immediately.
