Couscous-vegetable salad with mackerel
Meal salad of couscous, mackerel, garlic, wok vegetables, fresh coriander, ground cumin and pine nuts.

Clean the mackerel and spread the fish meat into small pieces. Sprinkle the couscous in a large bowl, pour the water on it and let it soak for 6 minutes.

Peel the garlic and cut finely. Heat the oil in a stir-frying pan the garlic 1 min. Add the wok vegetables and stir-fry approx. 4 min. Cut the coriander leaves fine.

Roast the pine nuts in the meantime. Stir the couscous with a fork. Mix with the wok vegetables, coriander, cumin seeds and pine nuts. Season with pepper and salt.

Spoon the couscous salad on a large scale. Divide the pieces of mackerel over them and sprinkle with pine nuts.
