Directions

  1. Grate 1 teaspoon of the zest of the orange and squeeze out the fruit.
  2. Heat the oil and fry the spring onion 2-3 minutes.
  3. Add the saffron, honey, orange zest, juice, raisins, 200 ml water, salt and pepper. Heat and put the fish in it.
  4. Allow the fish to cook for approx. 10 minutes at the boil.
  5. Meanwhile, roast the almonds in a dry, hot frying pan.
  6. Prepare the couscous according to the instructions on the package. Put the almonds and butter through.
  7. Serve the couscous with the fish sauce and sprinkle with parsley.
