Mix the couscous in a bowl with the curry, cumin, raisins and 4 tablespoons of olive oil. Pour boiling water over the couscous until it is just below and let it soak for about 5 minutes.

Stir in the couscous with a fork, add the lemon juice and season with salt and pepper.

Heat the rest of the olive oil and fry the onion for about 5 minutes. Add the celery and cook for another 3 minutes. Scoop the onion and celery through the couscous. Add the parsley and crumble the feta over the couscous with celery.
