Potato paste
A tasty Italian recipe. The vegetarian side dish contains the following ingredients: crumbly potatoes, flour, egg, (freshly grated) nutmeg and grated spicy cheese (eg grana padano).

Clean potatoes and cook in 20 minutes.

Drain, peel and crush potatoes.

Spread the potato crumb on the work surface (preferably stone or stainless steel) and sprinkle flour over it.

Mix egg, pinch nutmeg and half of cheese with potato crumbs until cohesive dough is formed.

Dough mix into 6-8 portions and form into long rolls of 1-2 cm thick.

Cut rolls into pieces.

Pieces of dough (= gnocchi) boil over salted water (as soon as they are cooked, gnocchi surface).

Remove from the pan with a skimmer.

Rest of cheese to serve.

Delicious with melted butter and chopped fresh sage..
