Couscous with pumpkin, chickpeas and raisins

Preheat the oven to 200 ° C.

Wash the pumpkin and halve in length. Remove the pips and stringy inside with a spoon, leave the peel.

Cut both halves into cubes of 1 cm. Mix the pumpkin with the honey and spread over a griddle covered with parchment paper.

Bake for about 20 minutes in the oven until the pumpkin is soft. In the meantime, prepare the couscous according to the instructions on the packaging.

Clean the orange. Grate the orange zest and squeeze out the fruit. Drain the chickpeas in a colander and rinse with cold running water.

Mix the couscous with the orange zest and juice, the chickpeas, oil, ras el hanout and raisins.

Sprinkle the pumpkin with the sea salt and spread over the couscous. Serve warm, lukewarm or cold.
