Couscous with sausages
Couscous with pumpkin, mushrooms, onions, pistachios and beef chipolata sausages from the oven.

Preheat the oven to 180 ºC.

Cut the onion into half rings. Clean the mushrooms with kitchen paper and cut into slices. Chop the pistachio nuts coarsely.

Heat the oil in a frying pan. Bake the chipolata in 3 minutes brown. Add the onion and mushrooms and cook for 4 min.

Remove from the heat and scoop the frozen pumpkin cubes, couscous and the pistachios.

Grease the oven dish. Put this mixture in the greased oven dish and pour the hot stock over it.

Make sure the couscous is fully covered, if not, pour boiling water.

Fry the couscous dish in the oven for about 15 minutes until done. Stir with a fork and season with salt and pepper.
