Sauce with orange, cranberries, caster sugar, cinnamon stick, cloves and port.

Directions

  1. Grate the orange zest of the orange and squeeze out the fruit.
  2. Put 2 tsp orange zest and 50 ml orange juice (per 8 people) with the sugar, salt, port, cloves, cranberries and the cinnamon stick in a saucepan.
  3. Let boil gently for 15 minutes while stirring until the sauce has thickened.
  4. After 10 minutes, break the back of a ladle ⅔ of the cranberries into pieces.
  5. Taste the sauce. If it is acidic, add some extra sugar. Cool slightly and remove the cinnamon stick and the cloves. Serve lukewarm.
