Directions

  1. Cut off the bottom woody part of the asparagus.
  2. Boil the asparagus in plenty of boiling water with salt in about 8 minutes until al dente. Rinse them under cold water and let them dry on kitchen paper.
  3. Wrap the asparagus per 2 pieces in a slice of ham but leave the cups free.
  4. Roll these packages through the flour and then through the whipped egg white. Then roll them through the breadcrumbs and leave them for an hour in the fridge.
  5. Heat the oil in a wide pan and fry the packets per 4 pieces around golden brown.
  6. Let them drain on kitchen paper and serve immediately. Delicious with a sauce of sour cream, mustard and chopped herbs.
