Crispy cheese onion rings
Homemade onion rings with old cheese in a batter of Texel beer with a sauce of mayonnaise and mustard.

For the dipping sauce, mix the mayonnaise and mustard in a bowl. Squeeze the lemon and add juice to taste in the dipping sauce.

Peel the sweet onions and cut into rings of 1½ cm thick. Separate the rings.

Mix the grated cheese, flour, cornstarch, cayenne pepper and possibly salt in a bowl.

Stir in the mineral water and beer slowly with a whisk.

Heat the sunflower oil in a high pan or in a deep fryer to 180 ° C. Remove the onion rings in parts through the batter.

Fry the rings in 5-6 portions in approx. 4 min. Golden brown. Let them drain on kitchen paper.

Serve the fried cheese onion rings on a flat dish with the dip sauce separately.
