Directions

  1. Wet the breastplate shapes and place them on a shelf.
  2. Put the sugar, the whipped cream and the butter in a saucepan and bring it to a boil with a wooden spoon on low heat while stirring.
  3. Let it boil gently for about 5 minutes.
  4. Drain the dissolved sugar from the spoon regularly.
  5. Remove the pan from the heat if the last drop of melted sugar sticks to the spoon like a thin wire.
  6. Cool quickly by stirring vigorously.
  7. Stir also along the wall of the pan, until the mixture makes a scratchy sound.
  8. Pour the breastplate mixture into the mold and press the breastplate while pouring so that the liquid sugar does not drain.
  9. Do this quickly because the sugar solidifies quickly.
  10. Allow the breastplate to cool down and harden well.
  11. After 15 minutes, gently slide the shapes with the breastplate over the baking paper so that they come loose.
  12. Turn the molds over and let the other side of the breastplate dry.
  13. Remove the shapes when the breastplate is completely hard and place them on a scale..
