Crispy ham rolls with spinach filling

Heat 2 tablespoons of oil in a large pan and fry the onion for about 5 minutes.

Add the spinach in 4 portions and stir-fry briefly, so that most leaves shrink slightly but do not give off any moisture.

Spoon the fried spinach in a colander and allow any moisture to drain. Season with salt and pepper and pour in the feta.

Always lay 3 slices of ham overlapping each other in length. Put 2 leaves of sage on each pile of ham.

Spread the spinach over it and leave a piece of ham at the top. Roll up to a solid role.

Heat the rest of the oil and fry the rolls first on the seam of the ham. Roll the ham rolls over during baking so that all sides are crunchy.

Meanwhile, cook the spaghetti al dente. Drain and pour in the pesto.

Slice the ham rolls diagonally and serve with the spaghetti.

Tasty with a tomato salad with olives, feta, capers and basil.
