Directions

  1. Remove damaged and open mussels that do not close after a tap on the edge of the countertop.
  2. Place the mussels in a large pan. Add the tomatoes with the garlic, the Italian herbs and 3 tablespoons of olive oil to the mussels.
  3. Cook the mussels, covered, 4-5 minutes or until they are open. Shake them after 2-3 minutes.
  4. Mix the rest of the olive oil with the orange juice, pepper, pesto and tomato paste. Dilute this sauce with a little bit of mussel fluid.
  5. Spoon the mussels on deep plates or in bowls. Serve the sauce.
