Crispy spinach filo rolls
A nice Mediterranean recipe. The vegetarian appetizer contains the following ingredients: filo puff pastry (225 g, frozen), fresh spinach (bag 300 g), eggs, Parmesan cheese (grated), mild olive oil and sesame seeds.

Let the filo puff pastry thaw in about 2 hours according to the instructions on the packaging.

Remove the griddle from the oven and grease it. Preheat the oven to 200 ° C. Meanwhile, finely chop the spinach and mix in a bowl with 1 egg, 2/3 of the cheese, 1 tsp oil, (freshly ground) salt and pepper. Spread a number of sheets of dough on a large cutting board and cut them in half lengthwise. Fold the pieces lengthwise in three, until long strips occur approx. 3 cm wide. First fold 1 side of the dough to the middle and brush it thinly with oil. Then fold over the other side and brush thinly with oil again. Spoon about 1 tbsp spinach filling on the short side of each dough step. Fold the dough tightly around the filling into sturdy rolls. Also cut, fold, fill and roll the rest of the sheets in this way. Place the rolls on the greased baking sheet. Split the other egg, beat the yolk with 1 tbsp water and brush the rolls. Sprinkle the rest of the cheese and the sesame seed over the rolls and fry the nibbles in approx. 20 min. Until crispy and golden brown. Serve warm or lukewarm.
