Chop the chocolate into small pieces.

Remove the seeds from the dates.

Cut the dates, figs and apricots into small pieces.

In a bowl, mix the ricotta with the vanilla sugar and orange zest and pour in the chocolate and the sliced dried fruit.

Keep it covered in the refrigerator.

Preheat the oven and bake the croissants according to the instructions on the suit.

Let them cool.

Cut the carambola (with skin) into thin slices, these are small stars.

Cut the segments orange into pieces.

Cut the croissants open and place the bottom on plates.

Brush them generously with the ricotta and place the orange wedges and the carambola bars on them.
