Croquettes of tomato stew with feta and pine nuts

Roast the pine nuts in a dry, hot frying pan until golden brown.

Mix the stew with the feta, oregano, pine nuts and 1 tablespoon of beaten egg. Form equal portions and roll with a cool hand into croquettes.

Roll this first through the flour, then through the egg and finally through the breadcrumbs. Put the croquettes in the freezer for 30 minutes to stiffen or fry directly.

Heat the frying oil to 180ºC and fry the croquettes in until golden brown.
