A tasty vegetarian appetizer: soup in a cucumber.

Directions

  1. Peel the cucumbers and cut 1½ cucumber into thick pieces of 5 cm. Crumble the cucumber pieces so that trays appear. Remove the seeds from the remaining half and cut the rest finely.
  2. Heat the butter and fry the shallot, garlic and finely chopped cucumber for 5 minutes.
  3. Pour in the stock and simmer for 5 minutes.
  4. Puree the soup with half of the basil. Stir in salt and pepper to taste.
  5. Serve the soup in the cucumber boxes. Sprinkle the rest of the basil over it.
