Peel the potatoes. Put the mayonnaise in a bowl. Stir in the garlic from the squeezer, the capers and the paprika powder.

Cook the whole potatoes for about 20 minutes.

Drain and steam them dry. Allow the potatoes to cool. Cut them twice in length so that 8 potato parts are formed.

Heat a dash of olive oil in a frying pan and fry the pieces of potato quickly crispy and light brown on all sides.

Place the potato parts in a dish and sprinkle with sea salt and parsley with a few grains. The potato parts are dipped in the mayonnaise.
