Cucumber dip with mascarpone
A tasty Italian recipe. The vegetarian side dish contains the following ingredients: cucumber, lemon (scented), mint ((15 g), only the leaves), mascarpone (soft cream cheese and 250 g).

Halve the cucumber in the length and remove the seeds with a teaspoon. Grate the cucumber with a coarse grater.

Grate the yellow skin of the lemon and squeeze out the fruit. Slice the mint leaves. Mix the cucumber, lemon zest, fresh mint and mascarpone. Season with lemon juice, pepper and salt. Allow the flavors to absorb for about 1 hour. Keep covered in the refrigerator. Delicious with the spaghetti all'arrabbiata and the rosemary steak.
