Cucumber salad pickle and herring
A delicious scandinavian recipe. The side dish contains the following ingredients: fish, winter carrot (1 x 1 cm cubes (brunoise)), cucumber, gherkins (in slices), soured herring ((pot 380 ml), in cubes of 1 x 1 cm), cream fraiche (125 ml) and horseradish (jar 140 g).

Cook the winter carrots in 3 minutes until al dente. Drain and cool in 10 min.

Meanwhile, cut the cucumber lengthwise in quarters. Remove the seeds with a teaspoon and cut the flesh into cubes of 1 x 1 cm (brunoise).

Serve the cucumber, pickles, herring and winter carrots in bowls on a flat dish. Mix the crème fraîche with the horseradish and season with salt and pepper. Serve the sauce in a bowl with the vegetables and fish.
