Cucumber salad with red pepper
Salad of cucumber, lime, red pepper, cane sugar and fish sauce.

Halve the cucumbers in the length and remove the seeds with a teaspoon.

Cut half the cucumbers into pieces of 5 cm long and cut lengthwise into strips of ½ cm wide.

Clean the lime. Grate the green skin and press 1 half. Cut the other half into segments.

Cut the stalk of the red pepper. Roll the pepper between your hands so that the seeds fall out. Cut the pepper into thin rings.

Put the lime zest, lime juice, red pepper, sugar, fish sauce and oil in a bowl. Stir until the sugar is dissolved and scoop through the cucumber.

Let stand for 15 minutes. Serve the lime wedges.
