Cut the cucumber with a cheese slicer into wafer-thin slices. If you have a mandolin, cutting is even easier.

Mix the cucumber with the shallot, garlic, olive oil, (white) balsamic vinegar and parsley.

Leave this salsa covered for about 30 minutes at room temperature.
