Cucumber sandwiches with dill butter

Cut the cucumber into wafer-thin slices. Sprinkle with salt and put in a colander.

Using a bowl, press the liquid out of the cucumber. Spread the cucumber on a folded double tea towel.

Place another tea towel on it and press it out with a rolling pin.

Chop the shallot very finely. Cut the dill finely. Stir in the butter with the shallot, dill and Dijonnaise. Season with salt and pepper.

Cut the crusts of the bread.

Spoon the lemon juice, sugar and white pepper through the cucumber slices. Spread the bread with the dill butter.

Divide the cucumber over half of the slices of bread. Cover with the rest of the bread. Cut each double sandwich diagonally in four.
