Cucumber soup with radish and mint
Wash the cucumbers and cut them into pieces. Cut 8 radishes into thin slices and keep separate.
Puree the rest of the radishes with the cucumber, yogurt, horseradish and 1 tablespoon mint leaves in a blender or with a hand blender until smooth. Season with salt and pepper.
Pour the soup into glasses and put it in the refrigerator if necessary. Garnish the cucumber soup with radish and mint.
