Cucumber soup with radish and mint

Directions

  1. Wash the cucumbers and cut them into pieces. Cut 8 radishes into thin slices and keep separate.
  2. Puree the rest of the radishes with the cucumber, yogurt, horseradish and 1 tablespoon mint leaves in a blender or with a hand blender until smooth. Season with salt and pepper.
  3. Pour the soup into glasses and put it in the refrigerator if necessary. Garnish the cucumber soup with radish and mint.
