Heat 2 tablespoons sunflower oil and fry the chicken breast brown.

Remove the chicken from the pan and fry the onion for a few minutes at a low setting in the shortening.

Add the sugarsnaps, cauliflower florets and curry paste and stir fry for a few minutes.

Add the coconut milk and the chicken and stir well. Let the sauce simmer gently for about 5 minutes.

Heat the sunflower oil in a high pan. Fry 200 grams (uncooked) noodles shortly in 8 small portions so that the noodles swell but not brown. Scoop out of the pan with a slotted spoon and drain on kitchen paper.

Spoon the curry into bowls, sprinkle with 1 bunch of coriander, coarsely chopped, and divide the fried noodles over it.
