Puree the mango with 2 tablespoons of water in a food processor. Stir the mango puree and fresh mint coarsely through the vanilla custard.

Pour the vanilla custard into the ice molds and put in the freezer for at least 4 hours until the ice cream is completely frozen and frozen. Serve ice cold.
