Directions

  1. Make a sauce by mixing the crushed anchovy fillets with the lemon juice, the mayonnaise, the garlic and some freshly ground pepper.
  2. Beat in a deep plate the protein with a few drops of water.
  3. Fill another plate with some white bread crumbs or breadcrumbs.
  4. Dab the asparagus dry. First get them through the protein and then roll them through the bread crumbs.
  5. Heat a layer of sunflower oil in a wok or frying pan and deep-fry the asparagus in it. Serve them directly with the dip sauce.
