Directions

  1. Bring the cream and milk to the boil with the olive oil.
  2. Remove from the heat source, add the cheese and mix with a hand blender 2-3 minutes until smooth.
  3. Season with salt, pepper and nutmeg.
  4. Sift the soup and put it in the refrigerator (a day in advance).
  5. Roast the slices of bread lightly in a hot grill pan or toaster and cut into pieces.
  6. Serve the soup with the croutons.
