Bring the cream and milk to the boil with the olive oil.

Remove from the heat source, add the cheese and mix with a hand blender 2-3 minutes until smooth.

Season with salt, pepper and nutmeg.

Sift the soup and put it in the refrigerator (a day in advance).

Roast the slices of bread lightly in a hot grill pan or toaster and cut into pieces.

Serve the soup with the croutons.
