Egg rolls with shrimps and lime

Heat 1/2 tablespoon of oil in a frying pan and fry the leek for about 2 minutes. Allow to cool and scoop the shrimp. Spoon 1 teaspoon lime zest, salt and pepper.

Divide the filling into 8 portions. Fold in 1 sheet of dough in three and brush with oil. Place a portion of filling on one of the shortest sides. Brush with oil and fold 1 point of the dough over the filling to create a triangle. Fold the dough into a triangle in 3x and fold the spring roll with the remaining sheet. Prepare 8 packages and cover in between to prevent drying out.

Mix the rest of the lime zest, juice, garlic, mayonnaise and sour cream into a sauce. Heat the remaining oil and deep fry the packets until golden brown. Drain and serve the egg rolls with the sauce.
