Mix the crab with the crème fraîche, dill, lemon zest and juice and season with salt and pepper. Beat the whipped cream until stiff and carefully fold through the crab mixture.

Spoon the crab mousse into a piping bag. Roll the slices of raw ham into rolls and inject some of the crab mousse. Put the rolls on a large plate.
