Preheat the oven to 100ºC. Do not cut overly ripe bananas into thin slices and place them side by side on a baking sheet with parchment paper.

Beat the lemon juice with a pinch of cinnamon powder and a few drops of sunflower oil and brush the slices of banana. Dry the banana in the oven for about 1 hour.

Remove from the oven and place a piece of baking paper on top of the baking tray. Grasp the baking tray with the baking paper with oven mitts on the side and turn over in a gentle movement.

Put 1 sheet of parchment paper back on the baking sheet and dry the other side of the banana uncovered for another 1 hour in the oven.

Allow the crispy banana chips to cool on a rack so that the slices are crispy.
