Directions

  1. Remove the crowns from the aubergines and cut each aubergine lengthwise into 8 slices of 1 cm thick. Boil the slices with salt for 2 minutes. Drain and pat dry well.
  2. Place 2 slices of eggplant crosswise on a shelf. Put in the middle a slice of tomato sprinkled with salt and pepper, mozzarella and again tomato. Sprinkle a little bit of thyme.
  3. Fold the ends of the aubergine around the filling into a package. Make 8 packages and put them in plastic wrap for 15 minutes in the refrigerator.
  4. Mix the ingredients for the dressing. Roast the pine nuts in a dry hot frying pan.
  5. Heat a grill pan. Brush the packets (without foil) with oil and grill them for 4-5 minutes per side in the grill pan.
  6. Serve them sprinkled with the pine nuts and parsley, with the dressing separately.
