Preheat the oven to 200ºC. Divide the bread cubes over a baking tray. Mix the olive oil with half the garlic and sprinkle over the bread. Fry the croutons 7-8 minutes in the middle of the oven and let cool.

Put the lettuce in a bowl. Mix the tomatoes, cucumber, onion, olives, oregano, salt and pepper through the bread cubes.

Mix the ingredients for the dressing with the rest of the garlic, salt and pepper. Scoop this dressing through the vegetables and divide this over the lettuce.

Sprinkle the salad with the goat's cheese.
