Fast cauliflower omelet with stir-fry vegetables


Omelette of egg, cauliflower rice and Asian wok vegetable.

Directions

  1. Beat the eggs and mix with the cauliflower rice. Add salt if necessary. Divide the oil over 2 frying pans and heat.
  2. Divide the egg mixture over the pans. Turn the heat down and let the egg solidify in 5 minutes.
  3. Heat the rest of the oil in a wok. Stir-fry the vegetable mix for 3 minutes on a high heat. Put the omelettes on the plates.
  4. Divide the vegetables over 1 half of the omelets and fold the omelettes double over the vegetables.
