Scrape the fennel tubers into wafer-thin slices.

Beat the ingredients for the dressing together to taste with salt and pepper.

Pour the dressing over the fennel and let marinate for about 10 minutes.

Spread the lamb's lettuce over a bowl, put the marinated fennel on top and sprinkle with the dressing.
